Introducing our new favorite easy lunch...Instant Cup of Soup! This is so fun because it is easy, WAY healthier than Ramen noodles, and everyone gets to pick their own flavor! My kids really love it, because it puts them in control of what veggies to put in their soup (or which ones to leave out), so everyone is happy. We have made beef stew, corn chowder, broccoli soup, butternut squash soup and many more. My 5-year-old son exuberantly tells me every time we make it, "I wish we could eat this every day!!"
Choose Your Own Soup-venture
2 Tbsp. Your
choice of Thrive meat
¾ cup Any
combination of Thrive veggies*
½ Tbsp. Thrive sauce blend (Veloute or Espagnole)**
¼ tsp. Chef’s Choice seasoning
1 cup boiling
water
In a large mug,
layer all of the ingredients in the order listed above. Stir it together, and wait 10 minutes. Add more Chef’s Choice seasoning or sauce blend to suit your tastes,
if desired.
* I recommend including 1 Tbsp. of
onion in the veggie combo. I do NOT
recommend putting in carrots, as they take longer to rehydrate and tend to
still be crunchy after 10 minutes.
** The Espagnole (beef gravy sauce) has nearly twice as much sodium as the Veloute (chicken gravy) - so I found that I needed to add extra Veloute for flavor, but the Espagnole was just about right with using 1/2 Tbsp. You'll have to just experiment and figure out what suits your taste.
