Ok folks! Here's my next recipe I perfected this week. 15 minutes to cook up, hearty and delicious! Plus, chopped chicken and cheese blend are on sale this month! Wahoo!! And, as an added bonus, doesn't it look pretty in the jar?? I think it looks like sand art jars...only you can actually eat what's inside of this little beauty. I hope you like this recipe! Let me know what you think.
Chicken Enchilada Soup in a Jar
By Sabrina
Winder – serves 4
¼ c. Thrive cornmeal
2 tsp. Thrive chicken bouillon
1 Tbsp. garlic powder
2 tsp. chili powder
1 ½ tsp. cumin
¼ tsp. chipotle powder
2 Tbsp. Thrive tomato powder
2/3 c. Thrive cheese blend
2/3 c. Thrive tomato dices
½ c. Thrive green peppers
Measure the ingredients in the order listed, into a wide mouth quart size mason jar. Place a new oxygen absorption packet in the top of the jar, then put on a new lid and ring. Store away from light and heat to ensure a longer shelf life.
Remove oxygen absorber
packet, then dump contents of the jar into a pot with 6 cups of cold water. Stir
ingredients into water until all lumps are gone. Bring to a boil, turn down to medium heat and
let simmer for about 10-15 minutes.
Serve with fresh tomatoes or avocado, tortilla chips, and sour cream.
Oh my goodness!! Sabrina, this tastes AMAZING!! We had it for dinner tonight. What a great recipe! I'm glad I doubled it.
