Instant Blueberry Muffin Mix in a Jar

Have you tried our NEW blueberries yet?!?

These blueberries are absolutely delightful!  When I first heard the news that Thrive Life had a new, state-of-the-art freeze dryer becoming operational...I wasn't all that excited.  I mean, a freeze dryer is a freeze dryer, right?  Wrong.  Just like there is a difference between a Ford and a Cadillac...there is a difference between our freeze dryers and the other ones out there.  

I became convinced of this when I got to try some of the new food from the freeze dryers, like the new amazing broccoli and our new blueberries.  The new blueberries are SO GOOD!!  The old blueberries were kind of small and hard - still yummy, but nothing special.  Our NEW blueberries are perfection!  They are big, light, crunchy, and they almost melt in your mouth!

Once the new berries came out, I decided that for Christmas presents this year, I wanted to make a blueberry muffin mix in a jar.  So, I took the recipe that I used to make from scratch, transferred all of the wet ingredients to our freeze dried equivalents, and Bam!  I have a new, delicious, EASY muffin mix!!  




Instant Blueberry Muffin Mix in a Jar
Makes about 16 muffins – by Sabrina Winder


1 ¾ c. flour
1 Tbsp. baking powder
½ tsp. salt
½ cup granulated sugar
1 tsp. Thrive Life lemonade mix (optional item available during the summer)

Measure everything in the order listed, into a 1 quart mason jar.  Place a new oxygen absorption packet in the top of the jar, then tightly screw on a lid and ring.  Store away from light to ensure a longer shelf life.


Remove oxygen packet, and dump contents of the jar into a bowl with ½ c. vegetable oil and 1 c. water.  Stir everything together until blended.  Scoop batter into prepared muffin pan, and bake at 350 for 15 minutes or until it starts to slightly brown on the tops of the muffins.
