Cheesy Vegetable Chowder in a Jar

Happy October, everyone!  

Here's another awesome soup in a jar recipe I created for ya. I was looking at what was on sale for this month, and it looked like soup is on the menu! 

One thing to note - if you look at the sale page, you'll see dehydrated potato chunks listed on there.  I originally tried making this soup with the dehydrated potatoes, and it took so long (25-ish minutes) for the potatoes to soften, that everything else came out overcooked.  So, I used our freeze dried potatoes instead, since they only need 10-15 minutes to cook.  That way, everything else would still keep its nice flavor and texture without being over boiled.  

So why do we even have dehydrated potatoes, when 99% of everything Thrive makes is freeze dried??  It's to give you more options.  The dehydrated potatoes are a nice thing to use if you plan to let it simmer in a crockpot or in a soup for a long time, because they will hold their shape a little better and won't break down.  On the other hand, the freeze dried potatoes are nice when you are looking for a faster meal.  So, for a speedy soup in a jar recipe, I felt like the freeze dried potatoes were a better fit.  

Here's the recipe:  

Cheesy Vegetable Chowder in a Jar

Serves 4-5

1 ½ tsp. garlic powder
2 tsp.  Oregano
2 Tbsp. flour

Layer everything in the order listed, into a 1 quart mason jar.  Place a new oxygen absorption packet in the top of the jar, then tightly screw on a lid and ring.  Store away from light to ensure a longer shelf life.

Dump contents of jar into 5 cups of cold water into a pot.  Heat to a boil, stirring occasionally, then continue to simmer for about 10-15 minutes until potatoes are soft.
