Chicken Fajitas in a jar

Nothing says summertime like a nice, delicious fajita!  The best part about this recipe is that you can put together a bunch of jars of this recipe and have it ready to go on your shelf.  So then when you're in a pinch and need a quick and easy dinner...you can pull this out and have dinner on the table in 25 minutes (with only 5 of those minutes requiring you to actually do anything).  Voila!!  Sure beats a run to Taco Bell! 

One note about the Thrive cilantro.  Yes, it DOES make a difference if you use Thrive cilantro vs. other brands.  I'm not terribly picky on most of my seasonings...but I had literally given up on using dry cilantro from a spice can, because other brands didn't taste at ALL like the fresh kind of cilantro.  I was SO thrilled to try the Thrive Cilantro and find that it actually tastes like fresh cilantro!  That is all I have on my shelf now!!



Chicken Fajitas in a jar
By Sabrina Winder – serves 4

1 tsp. cumin
1 tsp. chili powder
½ tsp. salt
1 tsp. garlic
¼ tsp. chipotle powder
1 ½  Tbsp. Thrive cilantro
½ tsp. Thrive limeade powder*

Layer ingredients in the order listed, into a wide mouth quart sized mason jar.  Place a new oxygen absorption packet in the top of the jar, then put on a new lid and ring and close tightly.  Store away from light to ensure a longer shelf life.

Remove oxygen packet, then dump contents of jar into a bowl and pour 2 cups water over everything.  Let sit for 20 minutes, to allow chicken time to soak up the water.  

Heat up a frying pan with a little oil, then dump contents of bowl into the pan.  Fry it up until chicken & peppers are crisped and heated through.

Serve on a tortilla with shredded cheese, lettuce, tomato, sour cream, and guacamole.  J

*The Thrive Limeade powder is a seasonal item, and is generally available to buy during the summer months only.  I always stock up on it (and the Lemonade powder) to get my through the winter when it's not available!  If you can't get the Limeade powder, you can always throw a dash of fresh lime juice in the fajitas while it's cooking.
