Lemon Raspberry Cake Bars in a jar

Here's another easy gift idea.  This one is excellent because it is super inexpensive to make, yet still original and delicious.  There's only one catch though: the Thrive Lemonade Mix is a seasonal item, and the website indicates there is a limited supply left for this year.  So HURRY on over there and order yourself a can!  If my calculations are correct, one can of the lemonade mix should make about 30 recipes of these jar gifts.  

Lemon Raspberry  Cake Bars in a jar

2 ½ Tbsp. Thrive lemonade powder (*NOT the same as Country Time lemonade mix!)
1 1/4 cup flour
½ tsp. salt
½ tsp. baking soda
1 1/3 cup granulated sugar

Layer ingredients in the order listed, into a 1 quart wide mouth mason jar.  Place an oxygen absorber in the top of the jar, and close tightly with a new lid and ring.

Dump contents of jar into a bowl with 2 eggs and 1 cup water.  Mix until everything is incorporated, allowing the raspberries to break up into little pieces. Pour batter onto a greased jelly roll pan.  Bake at 350 degrees for about 15 minutes, or until lightly browned at the edges.  Remove from oven and cool.  Sprinkle ¼ cup powdered sugar across the top of the bites, if desired.  Cut into 1 1/2 inch squares and serve.



*What's the difference between Thrive lemonade powder and Country Time lemonade powder?  Country Time lemonade powder is like 95% sugar.  (That's just a guess, but probably not too far off!)  Thrive lemonade powder is almost straight lemon.  So one container of Thrive lemonade powder makes several gallons of lemonade AND you get to put in your own sweetener!!  And you can use it in recipes when you want that nice lemon flavor.  :)

  2. Do you think that the scrambled egg mix would work in place of the two eggs to make it completely dry except the water?

    1. Hi Val! YEs, I'm sure the scrambled egg mix would work. I left it out to keep the cost of the recipe down, while egg prices were so high from the avian flu. But once egg prices aren't so crazy and whole egg powder is available again, I'll try adding that to the recipe and it should work fine. :)
