It may be September...but it's still hot enough to justify eating a bowl of ice cream if you ask me! I just discovered an amazing way to make some ice cream with...Thrive lemonade powder!! It is seriously amazing. Have you had the Chick-fil-a frosted lemonade? It's not quite like that, but close. It has a much creamier taste to it (probably because it's ice cream), but that fresh lemon flavor it very close to the frosted lemonade from Chick-fil-a. Sooo yummy!!!

Lemon Ice Cream
Makes close to ½
gallon
4 cups whole milk
1 ½ cups sugar
1 tsp. vanilla
2 Tbsp. Thrive lemonade powder (NOT the same as Country Time lemonade mix*)
2 cups cream
Ice (5-10 pounds)
rock salt (found at the local grocery store next to the charcoals)
Directions:
Beat
together the milk, sugar, vanilla, and lemonade powder for about a minute until
the sugar and lemonade is all dissolved in the milk. Dump in the cream and beat everything
together until well blended. Dump
everything into your ice cream mixer canister, put the paddle inside, put the
lid on top, then place inside the ice cream bucket. Attach the motor/crank to the paddle and lid
BEFORE putting ice in the bucket. It
will save you a lot of frustration doing it this way. You’ll thank me later.
The ice and rock salt go in the bucket around the canister, but never touch the ice cream you're making. Make sure you put in plenty of the rock salt. |
Dump ice in
the bucket around the ice cream canister, throwing in generous handfuls of rock
salt along the way. The rock salt is
VERY important!! If you don’t use any
salt or don’t use enough salt…the ice cream will not freeze and thicken as it
should. Run the ice cream mixer for
about 30-60 minutes until the ice cream thickens and collects around the paddle
thingy. Eat it before it melts, or put
in the freezer to harden and eat later.

*What's the difference between Thrive lemonade powder and Country Time lemonade powder? Country Time lemonade powder is like 95% sugar. (That's just a guess, but probably not too far off!) Thrive lemonade powder is almost straight lemon. So one container of Thrive lemonade powder makes several gallons of lemonade AND you get to put in your own sweetener!!
Blueberry-lemon Ice Cream-
Reduce
lemonade powder to ½ Tablespoon. Put 1 ½
cups Thrive blueberries in a bowl and cover with water for 5 minutes. (Or use fresh blueberries) Drain water from blueberries and stir the
berries into the milk and cream mixture before putting in ice cream canister.
I'm dreaming up a yummy pina colada ice cream using our coconut Snackies and pineapple. Doesn't that sound dreamy? I'll report back after I get that one figured out.
