Last week I took my family to one of the Happiest Places on Earth. No...not Disneyland. Moab, Utah. We love that place! There is SO much to see and do there! Hiking, biking, climbing, four-wheeling, and 2 national parks within reach - Arches, and Canyonlands. We always go camping there because, well for one, it's a whole lot cheaper than a hotel. It's one of the few places warm enough to go camping in March in this region. And it's fun!! And, one of the big pluses of camping there is that you are within reach of restaurants and grocery stores, so if you forget something, you can pick it up (although it's kind of a zoo in the one City Market store in town), or if you need some ice cream after a long day of hiking, you can stop at an ice cream shop on your way back to the campsite. It's the best of both worlds - camping and access to civilization.
While we were there, we discovered some great hiking trails there, and a not-so-great biking trail. I'll write about that in another post for those of you who are interested in learning what trails to explore there.
Since we were camping there, we ate a whole lot of Thrive Life food. It is just SO EASY for camping food!! It took me about an hour at home to work out the menu, then pre-measure all of the meals into bags. And then it was all ready to go - no cooler needed for 90% of our food. We still brought a cooler with us for just a few small things - lunch meat, yogurts, cheese...and that's about it. Although there is a grocery store there in town, I have grown tired of the lengthy trips through there - EVERYONE who comes to Moab to play is in the store every day!! So, we really wanted to minimize our trips in there for fresh food, and just make ahead our Thrive meals as much as possible.

Wednesday:
Breakfast - eat out on the way to Moab
Lunch at a hiking trailhead - bagels and cream cheese, fruit, cookies
Dinner at campsite - Thrive Dutch Oven Chicken and Broccoli Bake (recipe coming soon on this site)
Thursday:
Breakfast - Thrive Scrambled Eggs Super Breakfast Burritos (recipe coming soon on this site)
Lunch at hiking trailhead - sandwiches, fruit, pretzels, yogurt
Dinner at campsite - Thrive Southwestern Soup with tortilla chips
Friday:
Breakfast - Thrive Dutch Oven Mountain Man Breakfast
Lunch on biking trail - tortillas with cold cuts, cheese, veggies inside; fruit, beef jerky, fruit snacks, Thrive trail mix (a combination of Thrive fruits and yogurt bites)
Dinner - Thrive 15-minute Tinfoil Dinner (recipe coming soon on this site)
Saturday:
Breakfast while packing up camp - Bagels and cream cheese
Lunch at hiking trailhead - Thrive Chicken Salad Sandwiches, fruit, cookies
Dinner - eat out on the way home
