Mexican Fiesta for BACKPACKING

 I recently sent a bunch of young men into the wilderness with several backpacking dinners I had made for them, and word was that this fiesta dinner was among the favorites. So easy to make, and you can adjust things according to preference - change up the meat in it, or leave out the meat and increase the rice and beans. My favorite vegetarian kid that was on the backpacking trip was super happy with the Mexican Fiesta I made for him - no meat, just extra rice and beans. Here's the recipe:




Mexican Fiesta for BACKPACKING

one serving



1/3 c. instant rice
1/3 c. instant pinto beans (These used to be available through Thrive Life. Now I don’t know where to send you for them. You could try the instant red beans and see how they work.)
1/3 c. Freeze Dried ground beef OR chopped chicken
1/3 c. Freeze Dried corn
2 Tbsp. Freeze Dried diced tomatoes
2 Tbsp. Freeze Dried chopped onions
1 1/2 tsp. Freeze Dried green chili peppers
1/2 tsp. tomato powder
1/2 tsp. chili powder
1/2 tsp. powdered garlic
1/2 tsp. salt
1/2 tsp cumin
pinch chipotle powder (or more if you like some heat!)

Measure all ingredients into a freezer quality quart or gallon ziploc bag. Throw into your backpack! When ready to eat, boil 1 1/4 c. water and pour into the bag of ingredients. Stir it together and wait 10-12 minutes, until everything is nice and soft. Enjoy!!
